Start by preparing the dough for the paranthas. In a large mixing bowl, combine whole wheat flour with a pinch of salt. Gradually add water and knead the dough until it’s soft and smooth. Cover it with a damp cloth and set it aside for 15-20 minutes. Time: 15-20 minutes

While the dough is resting, wash and blanch the spinach. After blanching, blend the spinach into a smooth puree. In a separate bowl, crumble the paneer and mix it with the spinach puree.
