Preparation of Kaddu ki Sabzi
Step 1: Prepare the Pumpkin
Begin by peeling the pumpkin and cutting it into small cubes. Make sure the pieces are uniform in size for even cooking. This step usually takes about 5 minutes.
Step 2: Heat Oil in a Pan
Heat 2-3 tablespoons of oil in a pan or kadai over medium heat. Once the oil is hot, add cumin seeds (jeera) and let them splutter for a few seconds. This will take about 1 minute.
Step 3: Add Spices
Add chopped onions, ginger, and green chilies to the pan. Saute them until they turn soft and golden brown. This step will take around 4-5 minutes.
Step 4: Cook the Pumpkin
Now add the chopped pumpkin cubes to the pan. Mix them well with the spices. Add salt, turmeric powder, red chili powder, and any other spices you prefer. Cover the pan with a lid and cook on medium heat. Stir occasionally to prevent sticking. This step takes about 10-12 minutes.
Step 5: Add Water & Simmer
Once the pumpkin starts softening, add a little water to cook the pumpkin through. Cover the pan again and cook for another 10 minutes or until the pumpkin is tender and the flavors have blended. If you prefer a dry sabzi, you can cook it for a little longer without adding too much water.
Step 6: Final Touches
Once the pumpkin is cooked to your desired consistency, turn off the heat. Garnish with freshly chopped coriander leaves and serve hot. This final step takes 2-3 minutes.
