How to Make Hare Tamatar ki Sabzi/ हरे टमाटर की सब्जी – Easy Step-by-Step Instructions.

Preparation: Start by washing the green tomatoes thoroughly. Chop them into small pieces and set aside. Time taken: 5 minutes

Heating the Oil: In a kadhai or deep pan, heat oil over medium heat. Once the oil is hot, add cumin seeds and mustard seeds. Let them splutter. Time taken: 2 minutes

Sauteing the Spices: Add the finely chopped onions to the pan. Sauté them until they turn golden brown. Then add ginger-garlic paste and sauté for another minute until fragrant. Time taken: 3-4 minutes

Cooking the Tomatoes: Now add the chopped green tomatoes to the pan. Stir them well with the sautéed onions and spices. Let them cook for 5-7 minutes until they start to soften and release their juices. Time taken: 7 minutes

Adding Spices: Sprinkle turmeric powder, red chili powder, and coriander powder into the pan. Mix well, and let the tomatoes cook in the spices for another 2 minutes. Time taken: 2 minutes

Simmering the Curry: Add a little water to create a gravy-like consistency, then cover the pan and let the tomatoes simmer for 8-10 minutes on low heat, until they become soft and the flavors meld together. Time taken: 10 minutes

Finishing Touch: Add salt to taste and stir. Garnish with fresh coriander leaves before serving. Let the curry rest for a couple of minutes before serving it with roti or rice. Time taken: 2 minutes

Total Time: Approximately 30 minutes
