Instructions to make Arhar Dal (Jain):
Step 1: Rinse the Arhar dal thoroughly under cold water. Make sure it’s clean and free from any debris. (Time taken: 2 minutes)
Step 2: In a pressure cooker or a large pot, add the rinsed dal with water. Close the lid and cook for 3-4 whistles if using a pressure cooker. If using a pot, simmer for 20-25 minutes, or until the dal becomes soft and cooked through. (Time taken: 10-12 minutes for pressure cooker, 20-25 minutes for pot)
Step 3: While the dal is cooking, heat ghee or oil in a pan. Add cumin seeds and allow them to splutter. Then add finely chopped onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown. (Time taken: 5 minutes)
Step 4: Add chopped tomatoes to the pan and cook until they soften and turn mushy. Now, add turmeric powder, red chili powder, coriander powder, and a pinch of asafoetida (hing). Stir well to combine. (Time taken: 5 minutes)
Step 5: Once the dal is cooked and soft, add the prepared tempering (tadka) to the dal. Stir gently to mix everything together. Check the consistency of the dal. If it’s too thick, add a little water to achieve your desired consistency. (Time taken: 2 minutes)
Step 6: Add salt to taste and bring the dal to a boil once again. Let it simmer for 2-3 minutes to ensure all the flavors are well combined. (Time taken: 2-3 minutes)
Step 7: Garnish with fresh coriander leaves and a squeeze of lemon juice if desired. Serve hot with rice or roti. (Time taken: 2 minutes)
