Easy Step-by-Step Instructions for making Aloo Saag at Home.

Preparing the Greens: Begin by thoroughly washing and chopping the spinach (or other greens) into bite-sized pieces. Set them aside. This should take around 5 minutes.

Preparing the Potatoes: Peel and chop the potatoes into medium cubes. Set them aside as well. This step should take about 5 minutes.

Tempering the Spices: Heat oil in a large pan or kadhai over medium heat. Add cumin and mustard seeds, letting them splutter for about 30 seconds. Then, add finely chopped garlic, ginger, and green chilies, and sauté until golden brown. This will take approximately 3-4 minutes.

Sautéing the Onions and Tomatoes: Add the chopped onions and sauté them until soft and translucent, about 5 minutes. Then, add chopped tomatoes and cook for another 4-5 minutes, until the tomatoes soften and break down.

Adding Potatoes and Spices: Now, add the chopped potatoes to the pan along with turmeric powder, red chili powder, and salt. Stir well to coat the potatoes evenly with the spices. Let them cook for around 4-5 minutes.
