Recipe of Home Cooked Uttapam/ उत्तपम

Easy Step-by-Step Instructions for making Uttapam at Home.

Preparing the Batter: Begin by soaking rice, urad dal, and fenugreek seeds for about 4 to 6 hours. After soaking, grind the mixture into a smooth batter, adding water as needed. Let it ferment for 8 to 12 hours in a warm place. The batter should be thick and slightly bubbly. (Time: 15-20 minutes for preparation, 8-12 hours for fermentation)

Heating the Pan: Place a non-stick or cast iron tawa on medium heat. Add a little oil or ghee and let it heat up. You can test the temperature by sprinkling a little water on the pan—it should sizzle. (Time: 3-4 minutes)

Preparing the Uttapam: Once the pan is hot, pour a ladle of the fermented batter onto the pan and spread it out gently into a thick, round shape. Keep it slightly thicker than a dosa. (Time: 2 minutes)

Adding Toppings: While the batter is cooking, quickly sprinkle finely chopped onions, tomatoes, carrots, and capsicum on top of the Uttapam. Press them lightly into the batter to ensure they stick. (Time: 1-2 minutes)

Cooking the Uttapam: Drizzle a little oil or ghee around the edges of the Uttapam. Cover the pan with a lid and let it cook for 3-4 minutes, or until the bottom turns golden brown and the top is set. (Time: 4-5 minutes)

Flipping and Final Cooking: Once the bottom is golden and crispy, flip the Uttapam gently and cook the other side for another 2-3 minutes, until it's cooked through. (Time: 2-3 minutes)

Serving: Remove the Uttapam from the pan and serve it hot with coconut chutney or tomato chutney. (Time: 1-2 minutes)

Total Time: 25-35 minutes for cooking 4 Uttapams.
