How to Make Rajasthani Dal Bafla/ दाल बाफला – Easy Step-by-Step Instructions.

Step 1: Prepare the Dal (Lentil Curry)
Start by rinsing the lentils thoroughly. In a pressure cooker or large pot, add the washed dal and water. Bring it to a boil and cook for about 10-15 minutes, until the lentils are soft and fully cooked. Meanwhile, heat some ghee in a pan and add cumin seeds, chopped onions, and green chilies. Sauté them until golden. Then, add chopped tomatoes, turmeric, coriander powder, and cumin powder. Cook for another 2-3 minutes. Pour this tempering into the cooked dal and let it simmer for 5-10 minutes to let the flavors blend. (Time taken: 20-25 minutes)

Step 2: Prepare the Bafla Dough
In a mixing bowl, combine wheat flour, a pinch of baking soda (optional), salt, ajwain (carom seeds), and ginger-garlic paste. Gradually add water to knead into a smooth, soft dough. Cover it with a damp cloth and let it rest for 10 minutes. (Time taken: 15 minutes)

Step 3: Shape and Boil the Bafla
Once the dough has rested, divide it into small portions and shape them into round balls or slightly flattened dumplings. Boil water in a large pot and carefully drop the bafla into the boiling water. Let them cook for 10-12 minutes, or until they rise to the surface. This indicates that they are cooked through. Remove them carefully and set them aside. (Time taken: 15 minutes)

Step 4: Roast the Bafla
Heat a tawa or flat pan and add a little ghee. Once hot, place the boiled bafla on the pan and roast them until they are golden brown and crisp on the outside. Turn them gently to ensure all sides are evenly roasted. You can also place the bafla in an oven preheated to 180°C for 10-12 minutes for roasting. (Time taken: 10-15 minutes)

Step 5: Serve the Rajasthani Dal Bafla
Once the bafla are roasted, arrange them on a serving plate. Pour the hot dal over the bafla, allowing the dumplings to soak in the flavorful curry. Garnish with freshly chopped coriander leaves and a drizzle of ghee for extra richness. Serve hot and enjoy! (Time taken: 5 minutes)

Total Time: 1 hour – 1 hour 15 minutes
