Paneer Pasanda is a culinary masterpiece that celebrates the richness and elegance of Indian cuisine. Originating from the Mughlai tradition, this dish embodies luxury with its intricate flavors and royal presentation.

At its heart are tender slices of paneer, marinated in a velvety blend of yogurt, ginger-garlic paste, and a medley of spices including turmeric, red chili powder, and garam masala. Each slice is carefully grilled or shallow-fried to achieve a golden hue and a hint of smokiness, enhancing the paneer's natural creamy texture.

What sets Paneer Pasanda apart is its stuffing – a harmonious fusion of grated paneer, finely chopped cashews, plump raisins, vibrant green chilies, and fragrant cilantro. This stuffing adds layers of complexity and a delightful crunch, perfectly complementing the softness of the paneer.

The dish reaches its crescendo with the preparation of the luscious gravy. In a pan, onions are sautéed to a golden brown, followed by the addition of ginger-garlic paste and a vibrant tomato puree. A symphony of spices – turmeric, red chili powder, coriander powder, and cumin – infuses the gravy with depth and warmth. Cashew paste enriches the sauce with a creamy consistency, while a generous pour of heavy cream adds a touch of indulgence.

Garnished with sliced almonds, pistachios, and a sprinkling of fresh coriander leaves, Paneer Pasanda is a feast for the senses – visually captivating and irresistibly aromatic.
