1. Wash and blanch spinach (5 minutes): Wash the spinach leaves thoroughly. Boil water in a pot, add the spinach, and blanch for 2-3 minutes until wilted. Remove and immediately transfer to ice-cold water to retain the color. Drain and set aside.
